Description

For the Cake:

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Fudge Frosting:

  • 1 cup unsalted butter, softened
  • ½ cup unsweetened cocoa powder
  • 3 ½ cups powdered sugar
  • ½ cup heavy cream
  • 2 tsp vanilla extract

Instructions

  • Preheat & Prep: Set your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.

  • Mix the Dry Stuff: In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, and salt.

  • Mix the Wet Stuff: Add eggs, milk, oil, and vanilla. Beat until smooth, then slowly mix in the boiling water. (Yes, it’ll be thin—don’t panic.)

  • Bake: Pour the batter evenly into the cake pans and bake for 30-35 minutes. When a toothpick inserted in the center comes out clean, they’re done.

  • Cool: Let the cakes rest in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  • Make the Frosting: Beat the butter and cocoa powder together, then gradually add powdered sugar and heavy cream, mixing until smooth and spreadable. Stir in vanilla.

  • Assemble: Slather that rich, chocolatey frosting between the layers and all over the cake. Don’t hold back.

  • Want extra fudginess? Add a thin layer of chocolate ganache on top.
