Description

Imagine all the goodness of French toast, but in muffin form! These cinnamon sugar French toast muffins are soft, flavorful, and perfect for a cozy breakfast or brunch treat. Bonus: they’re great for meal prep!

Ingredients

Scale
  • 4 cups day-old bread, cubed (French bread or brioche works best!)
  • 4 large eggs
  • 1 ½ cups milk
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, melted

For the Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  • Prep the bread: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin. Place the cubed bread into a large mixing bowl.

  • Make the custard: In a separate bowl, whisk together the eggs, milk, heavy cream, vanilla extract, cinnamon, and sugar. Pour the mixture over the bread cubes, tossing gently to coat. Let it sit for 5 minutes to soak up all the goodness.

  • Bake: Divide the soaked bread mixture evenly into the muffin tin, pressing down lightly to pack them in. Bake for 20-22 minutes, or until golden brown and set.

  • Coat in cinnamon sugar: Mix the sugar and cinnamon in a small bowl. Brush the tops of the warm muffins with melted butter, then roll or sprinkle them with the cinnamon sugar mixture for that irresistible coating.

  • Serve and enjoy: Serve warm with a drizzle of maple syrup, a dollop of whipped cream, or enjoy them as is!

Notes

  • Use slightly stale bread for the best texture—it soaks up the custard beautifully without turning soggy.
  • Want a nutty crunch? Toss in some chopped pecans or walnuts!
  • These muffins freeze well. Just reheat them in the oven for a quick breakfast on busy mornings.
