Instructions

  • Preheat the oven:

  • Mix the dry ingredients:
    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

  • Cream butter and sugar:
    In a large mixing bowl, use an electric mixer to beat the butter and sugar until light and fluffy, about 2-3 minutes.

  • Add eggs and vanilla:
    Beat in the eggs one at a time, then add the vanilla extract.

  • Incorporate the kefir and dry ingredients:
    Add the dry ingredients to the wet mixture in three additions, alternating with the kefir (starting and ending with the dry ingredients). Mix until just combined; do not overmix.

  • Bake the cake:
    Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  • Prepare the glaze (optional):
    In a small bowl, whisk together the powdered sugar, milk (or kefir), and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar if needed.

  • Cool and glaze the cake:
    Let the cake cool completely in the pan before drizzling with the glaze or dusting with powdered sugar.
