- 1 lb Italian sausage (mild or spicy)
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 cups chicken broth
- 2 cups baby potatoes, diced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach (or kale)
- ½ tsp red pepper flakes (optional)
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
For Serving:
- Extra Parmesan cheese
- Crusty bread for dipping
Instructions
- Brown the Sausage: In a large pot over medium heat, cook the Italian sausage until browned and crumbly. Remove excess grease if needed.
- Sauté the Aromatics: Add diced onion and garlic, cooking until fragrant, about 2 minutes.
- Simmer the Soup: Pour in the chicken broth and add the potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.
- Make it Creamy: Stir in the heavy cream, Parmesan cheese, and red pepper flakes. Let it simmer for another 5 minutes until thickened.
- Add the Greens: Toss in the spinach (or kale) and stir until wilted.
- Serve & Enjoy: Ladle into bowls, sprinkle with extra Parmesan, and serve with crusty bread!
Notes
- Prefer a thicker soup? Mash some of the potatoes before adding the cream.
