Instructions

  • Preheat & Prep: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • Make the Crust: In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press firmly into the bottom of the pan. Bake for 8 minutes, then set aside to cool.
  • Prepare the Cinnamon Swirl: In a small bowl, combine brown sugar, cinnamon, and melted butter. Set aside.
  • Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in vanilla and sour cream.
  • Assemble the Cheesecake: Pour half of the cheesecake batter over the crust. Drizzle half of the cinnamon swirl over the batter and gently swirl with a knife. Repeat with the remaining batter and cinnamon mixture.
