For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar

- 5 tbsp unsalted butter, melted

- ½ cup brown sugar, packed
- 1 tbsp cinnamon
- 2 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
For the Cream Cheese Glaze:
- 4 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp milk (adjust for desired consistency)
Instructions
- Preheat & Prep: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Make the Crust: In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter. Press firmly into the bottom of the pan. Bake for 8 minutes, then set aside to cool.
- Prepare the Cinnamon Swirl: In a small bowl, combine brown sugar, cinnamon, and melted butter. Set aside.
- Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing after each. Stir in vanilla and sour cream.
- Assemble the Cheesecake: Pour half of the cheesecake batter over the crust. Drizzle half of the cinnamon swirl over the batter and gently swirl with a knife. Repeat with the remaining batter and cinnamon mixture.
- Bake to Perfection: Place the cheesecake in the oven and bake for 45-50 minutes, or until the center is just set. Turn off the oven and let it sit inside for 10 minutes with the door slightly open.
- Chill Time: Let the cheesecake cool completely, then refrigerate for at least 4 hours (overnight is best!).
- Make the Glaze & Serve: Mix cream cheese, powdered sugar, vanilla, and milk until smooth. Drizzle over the cheesecake before serving.
