Craving those buttery, bite-sized Chicken Minis at home? These homemade chicken nuggets tucked into soft, honey-glazed rolls are pure breakfast (or anytime) bliss!
Ingredients
For the Chicken Nuggets:
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- ½ cup dill pickle juice (for marinating)
- ½ cup buttermilk
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 tbsp powdered sugar
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp baking powder
- 1 large egg
- ½ cup milk
- 1½ cups peanut oil (or vegetable oil) for frying
For the Mini Rolls:
- 12 small yeast rolls (Hawaiian rolls work great!)
- 2 tbsp butter, melted
- 1 tbsp honey
Instructions
1️⃣ Marinate the Chicken
In a bowl, combine chicken pieces with pickle juice and buttermilk. Cover and refrigerate for 30 minutes (or up to 4 hours for extra tenderness).
2️⃣ Prepare the Coating
In one bowl, whisk together flour, cornstarch, powdered sugar, salt, pepper, paprika, garlic powder, and baking powder.
In a separate bowl, whisk egg and milk.
3️⃣ Coat & Fry the Chicken
- Heat peanut oil in a skillet to 350°F (175°C).
- Remove chicken from the marinade and pat dry.
- Dip each piece into the flour mixture, then into the egg wash, and back into the flour mixture.
- Fry in batches for 3-4 minutes per side until golden brown and crispy.
- Drain on a paper towel-lined plate.
4️⃣ Prepare the Rolls
- Preheat oven to 350°F (175°C).
- Place the rolls on a baking sheet.
- Mix melted butter and honey, then brush over the tops.
- Bake for 5 minutes until warm and glossy.
5️⃣ Assemble & Serve
- Slice each roll in half and tuck a crispy chicken nugget inside.
- Serve warm and enjoy with your favorite dipping sauces!
