For the Soup Base:
- 4 large russet potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 3 tbsp butter
- 4 cups chicken or vegetable broth
- 1 cup milk (or heavy cream for extra richness)
- ½ cup sour cream (optional, for tanginess)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika (optional, for warmth)
For Toppings (Optional but Recommended!):
- ½ cup shredded cheddar cheese
- 4 slices crispy turkey bacon, crumbled
- 2 tbsp chopped fresh chives
Instructions
1. Sauté the Aromatics
- In a large pot, melt butter over medium heat.
- Add onions and garlic, sauté until soft and fragrant (about 3 minutes).
2. Cook the Potatoes
- Add potatoes, broth, salt, pepper, and paprika.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
3. Blend for Creaminess
- Use an immersion blender to puree the soup until smooth (or leave some chunks for texture).
- If using a regular blender, blend in batches and return to the pot.
4. Make It Extra Creamy
- Stir in milk and sour cream. Let it heat through for 5 minutes, but don’t boil.
5. Serve & Garnish
- Ladle into bowls and top with cheddar, crispy bacon, and chives.
Notes
✔ For a thicker soup, mash some of the potatoes before blending.
✔ Prefer it chunky? Skip blending and just mash lightly with a fork.
✔ For extra depth, add a splash of Worcestershire sauce or a sprinkle of nutmeg.
