Instructions
1. Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Mix Wet Ingredients
- In a bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg, mashed banana, and vanilla.
3. Combine Dry Ingredients
- In another bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.
4. Make the Dough
- Gradually mix dry ingredients into the wet mixture.
- Fold in chocolate chips and walnuts if using.
5. Bake the Cookies
- Scoop tablespoon-sized dough balls onto the baking sheet.
- Bake for 10–12 minutes until golden brown.
- Let cool for 5 minutes before transferring to a wire rack.
